Mint, reduced-fat feta and pine nut stuffed peppers with green beans cooked with tomato and garlic. Fresh fruit salad for after (orange and grape). Was very nice.

Got a roast chicken in the oven, just wondering what to do with it (not planning a roast dinner). I think I might bung in some cherry tomatoes and courgette chunks to roast and do a garlickly butterbean mash.

I'm not sure I am strictly low carb (doing 'clean and lean') but...salmon fillet with roasted aubergine, courgette and tomato. It was really good!

It would be great to have a thread with lots of ideas!

Maybe not totally low-carb but yummy!

Just had a really fantastic vietnamese chicken salad made with some of the leftover roast chicken. uktv.co.uk/food/recipe/aid/515065 Will definately be making that recipe again - yum.

Chicken breast with philly in the middle, wrapped up in bacon with roasted veg (courgette, red onion, peppers)...mmm :-)
