Sad I am so exhausted decent food is just rotting in the fridge. I'm too tired to cook or prepare and just grab toast. Cant see a way out of this right now. Could I calorie count toast?

It becomes a vicious cycle unfortunately.
You're tired, you eat crap, you're more tired, you eat more crap etc.

Its hard but really try to limit bread, sugar and other crap as they'll make you lethargic.
Can you chuck a potato into the microwave and have something with it?
Chuck any veg you've got into pot and make some soup.
You'll find you have more energy and can cope better with your tiredness.
Also try a decent multi-vit and lots of water.
