Huge Favour!!! Do you have the time to eat WW cookery book?

I made a lovely recipe from it 2 weeks ago but have chucked the book out as it got loads of paint spilled on it.

Anyway I want to make it again and bought all of the ingredients but only just realised I dont have the recipe anymore!

Anyway.....its the minted lamb casserole I would be SOOOOOOOO grateful if someone could look it up for me

Lamb steaks with port and mint sauce ?

Low fat cooking spray
2 150g boneless lamb steaks
1 red onion sliced
300ml lamb stock
2 tablespoons port
2 teaspoons redcurrent jelly
2 teaspoons cornflour
1 tablespoon chopped fresh mint
salt and pepper

  1. Heat a large non stick frying pan and spray with low fat spra. Add the meat to the pan and cook for 2 mins each side to seal and rown. 2)Add onion to pan and cook for further 5 mins till starts to brown lightly. Stir in stock, port and jelly and ring to oil. Reduce heat and cover, simmer for 20 mins 3)Stir cornflower with a little cold water to make a thin paste and add to the pan. Cook, stirring until the sauce thickens a little. Season, stir in mint and stir at once.

Thats not it but i will save it for next time! Looks good and I have just bought a load of lamb cheap in costco!

I have found the recipe it was in the low point family cookbook or something so hadnt chucked it after all!
