Low Carb Recipe Thread 2

Hi All

I started a thread on here a while back where everyone posted their yummy low-carb meal ideas. I've fallen off the wagon recently due to a house move and a holiday so am now low-carbing to lose weight before Christmas.

Meals this week have been:

  • homemade chicken korma with stir fry veg- beansprouts go surprisingly well with curry
  • pad thai without the noodles
  • white fish (hake?) on a bed of ratatouille
  • moussaka with carrot salad (the carrot salad is delish will post recipe if anyone wants- makes a change from lettuce)
  • omelette and salad
  • carbonara sauce on courgettes

Anyone else like to post their low-carb meals?

Thanks for the ideas, I have little to contribute as am relatively new to low-carbing and am slightly stuck in lump-of-meat-with-veg hell. Finding it useful to have the same lunch every day though and that is currently:

  • chopped salad (celery, courgette, peppers, sweetcorn, sometimes tomatoes/cucumber, in tiny cubes) with chopped roast chicken breast.

...but sometimes:

  • smoked mackerel fillets with beetroot salad or green salad.
  • soup!

Mmm like the idea of smoked mackarel fillets for lunch Tartiflette! I know what you mean I am stuck in the soup or salad for lunch rut- although today I have leftover moussaka, yum.

The carrot salad is really easy but goes well with the richness of moussaka or other mince dishes:

Toast some cumin seeds (and fennel seeds if you have)in a pan til they release their aroma. Leave to cool

Grate carrot(s) into a bowl. Squeeze over juice of lime and honey to taste. Add cumin seeds et voila!

I like carbonara sauce on shredded, lightly boiled savoy cabbage, the bacon goes really well with the cabbage, yum :)

I tend to just have whatever I'm cooking for the family but without the carbs. Recently I've had:

Pork & orange casserole with cabbage (they had mash)
Foil-baked salmon with stir-fry veg (did noodles for others)
Cauliflower cheese with chopped bacon
Meatballs with broccoli (they had spaghetti)
Tofu stirfry (did rice for family)

I'm not super strict, mainly just cutting out the processed carbs. Find it so much easier if I can just cook one meal for all of us, does mean they miss out on things like risotto & fish pie but they don't seem to mind! :)

For lunch I usually have salad with chicken/ham/cheese/eggs/prawns etc or just leftovers from night before.

Runner beans, tossed in butter with a poached/fried egg on top.

Roast pork with stewed apples and mushrooms.

Fish with salad.

Strips of frying steak with mushrooms, paprika,thymn finished off with cream a la beef stroganoff with a green salad.

Personally I love mushrooms and find they make a good satisfying substitute for the carb element of a meal.
