Fav no point soup recipies please.

I really need to get focused and motivated so it's no point soup time! I know soup is genrally about boiling veg in a pan and then blitzing it but I tried this last week with some red pepper and butternut squash and it tasted AWFUL!!!!

So, if you would be so kind please can you post me YOUR FAV recipies so I can pinch them

The problem is boiled veg is not very flavoursome.

I use a different technique I got from an Ainsley Harriot cookery book, of all places. The original is for tomato soup but it will work with onions, carrots, parsnips, peppers and butternut squash as well:

Roast the vegetables with a little olive oil, seasoning and herbs on a high heat (I use 200C) until well browned. Add stock to the vegetables in the roasting tin and put it back in the oven. Turn down to medium heat (170C-180C) and leave for 20 mins. Take it out of the oven and puree, adding more stock if it needs thinning. I usually add more herbs too.

There should be more flavour this way but I find you still need a good lot of seasoning (and garlic). Spice works well too-caraway or cumin seed, smoked paprika, fennel seed etc.
