Low carb vegetarian?

Hi,

I've decided after doing lots of research etc that low carb (not no-carb) eating is the way for me - so maybe one portion of whole carbs a day.

Problem is I'm vegetarian, and when I turned veggie twenty odd years ago high carb/low fat cooking was all we were told to do, so for years I've based our meals around pasta, rice or potatoes. When I married I was a size ten but not any more, and I suspect that this is related to age (I'm now pushing 40), insulin resistance etc.

But low-carb, high protein meals for veggies are few and far between. There's a limit to how many bean based dishes I can take.

Does anyone have any ideas that might help?

Hiya

I am trying this at the moment. It sounds obvious but eating a lot more vegetables is really good. So you can do a big stir fry with tofu or omelette (or both yum) in it, and you find you don't really need much/any carbs with that.

Veggie curry with home made chapattis (easy and they are next to nothing in terms of actual flour).

Poached eggs with spinach.

Grilled/fried goats cheese with roasted veg & beetroot.

Grilled halloumi with proper tomato sauce and e.g. asparagus

Chickpea curry

Soups are good too - pea and mint, tomato, veg etc

Also try just making more of the veg based thing, and filling at least half your plate with that, rather than heap o' carbs with a light drizzling of veg, as is more usual if you're not thinking about it.

There's some really nice ideas here. I do eat mountains of veg (lots of roasted stuff at this time of year, and casseroles.

Maybe it's nt my main meal that's teh problem but the others? I feel a food diary coming on...

So are you finding it helps?

I'm low carb but like the Isabel dos rios I don't eat wheat and find that it's much easier to keep my weight down that way,ryvitas, pumpernickel, etc. are good and also fill you up more than wheat does.

Also there's loads more protein in watercress etc than people think. Oats are good and whole rice, I make a mashed parsnip topping to a veggie 'shepherd's pie'.

I've been doing low carb veggie cooking since the start of the year. I'm now 4.5 stone lighter. I'd recommend Rose Elliott's low carb veggie books (one 'diet' book and an accompanying book of recipes) and The Low Carb Vegetarian by Robin Robertson (all on Amazon). It does help if you like tofu!
