Looking for a cosy, low effort game

I’m a novice gamer and have recently been gifted a Nintendo Switch by my OH. I have little mental capacity left by the end of the day as we have a 2 and 4 year old but would like to do something a little more interesting in the evenings rather than doomscrolling from 8-11pm! I quite like fantasy but can never get my head around complicated games. I’m looking for something easy to play, maybe a nice little medieval village to potter around any suggestions welcome!

I have an 8 week old so my mental capacity can just about handle animal crossing which is sweet if you like decorating but can get a little repetitive.

I enjoyed Hogwarts Legacy. Little quests, fun running round a castle with things to explore.

Zelda breath of the wild is brilliant. Big open world, lots of interesting puzzles, not too hard but challenging and really cute.

If also recommend pokemon. My partner got it and I'm not sure I fully understand all the new rules but I enjoy running round, collecting them and having fun little explores

Stardew valley is a lovely game.

Yoshi's Craft World for the Switch.
We're working our way through Yoshi's Woolly World for the Wii U right now and it also perfectly fits this bill (but hasn't been released on the Switch AFAIK).

Since Animal Crossing and Stardew Valley have throughly been covered here's some obscure picks: If you don't mind Disney, Disney Dreamlight Valley is pretty good. I also like Mineko's Night Market (Japanese cat themed cozy game) and Paleo Pines (Dinosaur Farming). If you want something with simple puzzles I also highly recommend Untitled Goose Game it's a silly short but very fun game about a mischievous goose getting into trouble.
