Bullet proof cookie recipe?

Hiya 😊 I was hoping someone had an easy vegan cookie recipe… co-op haven’t done their vegan cookies for ages and I can’t remember the last time I saw the M&S ones. So thought I should try and make my own

I've been making them for over 10 years.

If you are looking for something simpler, the BOSH recipe is decent, though too crispy for my taste. The dough freezes well so you can make single cookies as the urge strikes. The baked cookies also transport well.
