I plan to start taking soups into work for lunch.
What are your favourite flavoursome, desk friendly recipes?

I made a soup with onion, ginger, garlic, chili, veg stock, carrot, pepper and sweet potato the other day. It was quite bland until I stirred in fried chili flakes and fried coriander seeds.

I am not vegan but I love curried sweet and potato soup.

Fry ½ an onion gently, add a few cloves of garlic (chopped) and 3 medium sweet potatoes (chopped). I then add a couple of teaspoons of medium curry powder (or add to taste) and stir it all up. I then add half a pack of creamed coconut (100% coconut) and some water or a tin of coconut milk and a little stock pot. I cook until the sweet potato is soft and then blend with the stick blender.

(As my husband needs extra protein and calories I blend a good dollop of cottage cheese into his).

Cumin, curry powder or smoked paprika. Any of these will add a nice depth to any veg soup. I would add coconut milk or unsweetened oat milk, or elmlea plant based cream.

I made similar to yours OP recently but added a tin of tomatoes, some red lentils, ground cumin and chilli flakes. Delicious.

Fry a chopped onion, celery and some garlic, fry off some tomato puree then add 2 tins of chopped toms and a pint of veg stock. Cook until all veg is tender. Blitz with a stick blender then add torn basil and vegan single cream.

Not made soup for ages , and loathe to admit we like going out to local independent cafes and having their homemade ones with a cheese scone .
Ones we particularly like are Roasted Tomato & Sweet Pepper , Carrot & Sweet Potato , Mushroom , Vegetable & Lentil & Tomato & Basil .

roast 4 red peppers, 4 large tomatoes and red chillies (2-4 depending on taste)

meanwhile sauté an onion and carrot with rosemary. Season.

Add roasted veg to the pan, add 1 cup red lentils and cover with stock and simmer.

Blend with immersion blender.

Fry some onions and garlic. Add chopped parsnips and a teaspoon of curry powder, salt and black pepper. When everything is cooked add some milk and blend. It’s my favourite soup.

My favourite home made soup is curried carrot and apple soup made in my soup maker. It’s just carrots, a baking apple, curry powder, vegetable stock cube and a small potato although I often add an onion as well. I get two big portions so have it twice with some freshly made bread ( I use part baked rolls) and possibly grated cheese ( you could use vegan cheese).

I’m planning to make some this week and might add some ouzo after the soup maker has finished its smooth programme to make a more filling meal.

I think this was one of Lindsay Bareham's. Spiced sweet potato and tomato.
you need an onion , one or two garlic cloves, a chicken 'stock pot', a tin of chopped tomatoes and a large sweet potato. A tsp of ground cumin, one or two dried red chillies to taste.
peel and chop the sweet potato, onion and garlic.
Heat some olive oil in a saucepan and fry the onion until it is soft and translucent.
add the tinned toms, potato, garlic, chicken stock pot, cumin, crumbled chillies and about half a litre of water. Cook for 20 minutes until the sweet potato is soft, add some salt then blend with a stick blender until smooth. Add some more water if you think it's too thick.
I like this with a swirl of natural yoghurt.

Longevity soup is usually tasty especially if you leave it on a low simmer.
