Best banana cake recipe?

I used to have a great recipe for a simple, wholemeal banana cake which was delicious, but I've lost it. The last recipe I used was a bit dry.

Ds wants me to make one for his birthday. Anyone got a healthy-ish (i prefer using wholemeal and no or little sugar) simple-ish, tasty fool proof recipe?

I've looked online but there's literally millions of them.

It's 100g sugar but in the past I've used less or used agave to replace.

Mash 2 large (or 3 small) ripe bananas. Mix in quarter a cup each of: vegan milk, nut butter, maple syrup. Add 2 cups of flour (I use mixture of wholemeal & spelt), 2 tsp baking powder, 2 tsps ground cinnamon, 1 tsp vanilla (alternatives = just 1 tsp cinnamon and two tbsp cocoa OR 1 tsp cinnamon and two tbsp carraway seeds). Put in greased 1 lb loaf tin. Bake at gas 4 or 5/ 180 or 190C until a skewer comes out clean (at least half an hour and up to 50 minutes - is quite forgiving on specifics)

This seriously yummy recipe is from the Lone Star restaurant in Barbados. Replace the butter with Flora (vegan) if required.
OVEN ...

Pre-heat to 180c (350f)

INGREDIENTS ...

3 or 4 over-ripe bananas mashed in a large bowl

3 ozs melted butter

8 ozs caster sugar

8 ozs flour

1 x egg, beaten

1 x tsp vanilla essence

1 x tsp baking soda

Pinch of salt

METHOD ...

Simple. Stir the melted butter into the mashed bananas and then add all the other ingredients.

Pour into a loaf tin - I prefer to use a silicone one. I top with a fine mist of Demerara sugar (optional).

COOKING ...

Bake for 50-60 minutes. Check that it’s done by using a skewer; it should come out clean.

Cool for at least 30-minutes. I decant onto a rectangular plate after about 10 minutes.

When cool serve as is, or with a fine spread of butter.

Seriously yummy.

Try banana cake with a thin-ish layer of chocolate icing - popular in my country years ago!

I've definitely used this one before! I thought it was the one that came out a bit dry but maybe not....

Ooh not seen one with nut butter and milk before, looks good.

Thanks but this has egg....could replace with flax seed I suppose but don't want to experiment on this occasion!
