Vegan brunch

Have a group of friends coming over at the weekend for brunch and trying to decide what to make. Am thinking of doing a loose Mexican theme using some soyrizo I have in the fridge and making a hash with cabbage and new potatoes, then maybe a tofu and black bean scramble or tofu scramble and seperately black beans in sauce like baked beans - should I do toast as well or any other interesting accompaniment (home made pico de gallo and some avocadoes if I can find any decent ones)

I’d like to have something sweetish that’s in keeping and have blanked. I’d usually make a banana bread or a tea bread but not sure what to make….they’ve sweetly all offered to bring something so maybe I just ask for that? I’m the only vegan but like to have an opportunity to do something vegan to show there’s more on offer than just fake sausages (they’re all very happy to eat vegan)

Your ideas sound amazing! I'd keep the tofu and beans separate. Don't forget the guac. Perhaps try and get some corn tortillas, and pickled pink onions? (The latter are also easy enough to make)

And it's Indian mango season! Make a mango salsa with lots of lime, a pinch of salt and some fresh red chilli (this would also work as a light dessert)

Toasted sourdough, a relatively thick layer of marmite, topped with smashed avocado. Absolutely delicious! Can add some chilli flakes too.

We sometimes have vegan chocolate chip pancakes with blueberries and a scoop of Swedish Glace for weekend brunch.

Thanks everyone - I went mexican in the end so in case anyone needs a future reference:
corn tortillas
sliced avocado
pico de gallo
soyrizo, cabbage and potato hash
jalepeno and coriander scrambled tofu
instapot smokey pinto beans

friends brought Rebel Recipes pecan and cinnamon rolls and added a touch of cayenne to suit the very loose mexican theme! OH - and I made mimosa margaritas which went down a treat

the soyrizo hash I bought the soyrizo in the states but this is a good recipe for it https://www.muydelish.com/soy-chorizo/ and I just story fried it with cabbage and potatoes and added chipotles in adobo and lime juice
