Help! DH wants us to go vegan!

I'm not a good cook and tend to stick with what I know. I'm panicking slightly! He's watched the Netflix show and has decided we should try to eat vegan during the week.

I have some issues:
first and foremost my tea. I drink milk in my tea. We tried oat milk a while back and even he decided it wasn't great. Is there a better option?

Mushy food makes me gag. He's talking eating lentils, peas and beans. Is there any way to prepare them so they're not mushy?

We, especially DS, eat a lot of cheese and yoghurt. How do you keep a growing teenager full without cereal/milk/cheese on toast? We're not looking to try out highly processed vegan copies of non- vegan food.

I cannot eat mushrooms. Well, I can eat them but then get horrific stomach cramps a few hours later. Lots of recipes seem to be mushroom based.

How do I make sure the DC are getting all the nutrients they need as they come into and through puberty?

Nuts - hazelnuts make DC2's mouth blister, walnuts make my mouth itch and I don't like any other nuts.

Is there an idiots guide to being a vegan somewhere?

He actually cooked last night 😮DC are grumbling but have said they are willing to try some new things. Honestly, it's probably easier to let him run with it until he gets bored of deciding what we're going to eat every day. I've ordered a couple of the books mentioned here and looked at some websites, but made him meal plan for this week. I'm not a great fan of cooking with meat anyway, and as I can't eat nuts and mushrooms and am not willing to make myself ill until I get used to them, we'll just see how it pans out.

I don’t usually think that everyone in a household should make their own individual meals but this sounds like it would be a good idea

If he wants to then let him but he can't tell you or your children how to eat. That's a bit controlling. I'd never let my partner dictate to me what diet I am to eat. Never.
Luckily we're both on the same page, we've reduced naturally together but didn't really do it via a discussion, it just happened.

I tried to go vegan and failed after a day. All the people i know who tried (for years) eventually went back to normal diets as they said they lost too much weight and were ill all the time and generally unhappy. Eating out is harder, more expensive etc.

It's better to simply eat less meat/dairy wherever possible instead. It's more doable.

Try deliciously ella recipes. I'm not vegan but I make a lot of them and alter them to our tastes.

We've drastically reduced our meat intake but not 100% we've been using oat milk for years, I feel its the least offensive out of almond, coconut and soya however that's entirely down to your tastes. I do like coconut milk in my coffee or on cereal now and again.

You can get dairy free milk which may be even more tasteless and closer to real milk. (If i have real milk now, it tastes extremely farmy to me!! Can't stand it now, whereas before it didn't really have much taste!!) So your taste buds do adapt!!

I could never give up chocolate or yoghurt or cheese so no advice there.
I've chosen to simply reduce everything else as much as possible, but if we're at a restaurant, I won't say no to a steak or roast.
