Is this a good enough meal

I'm cooking for some vegan friends tomorrow. I'm going to make something veggie I'm comfortable with and has been a hit with other people.

I'm veggie and I like it but just want to check it'll be substantial enough for a vegan.

It's a roasted squash and black bean recipe from the green roasting tin - as well as the roasted squash there's sweetcorn and obviously lots of lovely herbs and spices like chipotle chilli flakes and coriander. The recipe calls for feta to be crumbled over it which I'll obviously leave out. I'll serve it with coconut rice and some sides like guac.

Does that sound ok? I feel like without the feta it might be missing something?

Maybe some tofu crumbled on top or something. Garlic bread sounds lovely but don't use butter (not that you would, but YKWIM)

Yes, salad is a great idea. They are quite health conscious and I think that would go down better than garlic bread. I also have a Mexican salad I do that seems to always go down well.

I'd be very happy with that. If you did want to get nearer the actual recipe the Violife feta style fake cheese is actually quite nice.

Not keen on couscous especially with fruit in it.

I would also recommend the bio life feta. Not as crumbly as normal feta, but a pretty good alternative

Thank you - they're great people and have hosted us lots so I want to do a nice meal for them.

I love couscous but have already got the rice and coconut milk so I'll stick to that this time.

Violife or M&S feta alternative. Maybe have in a separate bowl so people can decide themselves if they want it. They're good but not everyone is a fan of the cheese alternatives.

You also can't go wrong with anything from the green roasting tin book!

I’ve made that recipe and love it. Think it sounds great with coconut rice. Not sure feta goes with coconut so seems perfect to me!

@Namchanged , it's a vegan meal for vegans and vegetarians, so it probably isn't intended to appeal to you.
