Adding protein to risotto

Any ideas? I don’t normally bother but am feeding hordes of teenagers so assume with no protein they’ll then be hungry within 30mins…was thinking of doing a butternut squash and sage risotto….

Edamame beans Confused

You could add some nutritional yeast or bake some chickpea flat bread as a side.
This said, a risotto keeps you full for long, even without the need to add proteins.

Are the teenagers vegan or just you OP

AutumnCrow · 28/11/2023 02:27

Scrambled (mashed up) tofu and mushrooms
Cashews, ginger, peppers and jalapenos

I'd ditch the sage tbh

Cormoran · 28/11/2023 04:27

Isn't it then just rice and stuff, instead of a risotto, which usually has specific ingredients that balance each other in harmony.
Unless you call the Asian fried rice and veggie a risotto, then you put whatever you want in it.

This has got to be the most middle class thread ever - feeding teenagers chickpea flatbread and tofu risotto lol.

Round here it would be a Dominos or Maccy D!

YireosDodeAver · 28/11/2023 07:08

Toasted walnuts are an excellent topping for a risotto.

Bobtheamazinggingerdog · 28/11/2023 07:08

Are these vegan teenagers??
Peas are a high protein vegetable and go nicely in risotto.

Cormoran · 28/11/2023 07:22

@Rafting2022 I am from Monaco, socca is a cheap street food. 1 cup of chickpea flour, 1 cup of water, a bit of olive oil, salt, crazy hot oven and pre-heated cast iron pan, done and delicious. Try it

PosiePerkinPootleFlump · 28/11/2023 07:25

Toasted walnuts as a pp said would go really well. I think it could also work well with a topping of crispy Chickpeas (toss drained Chickpeas in a bit of olive oil, salt and herbs/spices and roast in oven.

Bearpawk · 28/11/2023 07:26

White beans work well with swish and sage

Indiaplain · 28/11/2023 07:29

We add toasted cashews , sprinkled on top

kikisparks · 28/11/2023 09:11

Toddler has gone off risotto just now, but I add blended butter beans.

Citygirlrurallife · 28/11/2023 16:54

Thanks for the helpful responses - love the sound of toasted walnuts and creamy white beans so will do those - much appreciated
