Getting so stuck on lunch!

Help! I'm getting stuck in a lunch rut.

I have nailed evening meals - I write a meal plan for the week and it all goes smoothly.

However, I never know what to have for lunch.

I work in the middle of the day so need something super quick to prepare - or something that can be prepped on a Sunday for the week ahead.

Has to be filling as my job is physical.

Please help me to stay focussed and not resort to cheese sandwiches!

We do wraps,super easy to fill in the morning.falafal,couscous, humous,peppers/sweetcorn/cucumber etc,vegan cheese or mayo or anything you like so loads of ranges and super easy to make.

Sorry to point out the obvious but cant you just eat what you ate last night? Double portion and reheat the next day?

Do you have access to a microwave to heat up your lunch, or do you have to take it with you and eat it cold?

If you have a microwave, I'd go for either leftovers or a filling soup and a roll/sandwich. If no microwave, how about a pulse and/or grain-based salad, and maybe some bread as well.

Even if there's no microwave, hot food flasks are a godsend. DH has no facilities at work and it's kept him from a hungry and cold belly.

Yes I could easily double up evening meals. Not sure why the most obvious answer didn't occur to me 😂

I actually eat an early lunch at home before I start work, so can be warm or cold.

Pasta salad, couscous with toasted veg, hummus etc, cold or hot noodles with tofu veg and tasty dressing.

Bean pate sandwiches (especially butter bean). Mash half a can ( drained) with vegan mayo and a bit of garlic pepper. I like it with tomato or pepper on seeded bread.

I’ve recently discovered Sacla vegan pesto www.tesco.com/groceries/en-GB/products/283949873 It makes a delicious pasta salad with some cherry tomatoes and pine nuts.
Baked beans on toast
Lentil soup and ciabatta

There's a woman who keeps popping up on my Instagram who does a 'life changing salads' series. Ignore the silly name, they're all vegan and they look really substantial and tasty.

I love good quality almond or pnut butter and yeast spread on spelt bread or ryvitas (marmite if you prefer) with a quick salad that can be kept in the fridge without a dressing for a few days. Those spreads are brilliant because they supply a lot of protein, vitamins and minerals we need.

I make bibimbap for lunch a lot. I use those bags of microwave rice which you can also cook in the frying pan and add whatever veg there is in the fridge or freezer.

If you don’t like spicy food or you don’t have any Gochugang in you can basically add whatever you like to flavour it. Soy sauce or Thai sweet chilli are also good. I use brown rice and it is very filling and quick.
