Savoury breakfasts

Hello

I am a veggie doing veganuary and enjoying it more than I was expecting. I am looking about how to carry it on (won't be 100% but I was aiming to try in the week).

The only issue I am having is around breakfast. I typically am a 3 meals a day person and not a snacker. I almost always have breakfast and in non vegan times there were a lot of eggs involved. I found a high protein low carb breakfast set me up really well.

Since jan I've been having toast and nut butter, porridge with some fruit and seeds, coconut yoghurt (can't stand the soya stuff). Basically more carbs than I usually have to bulk it up. Oh and chia pudding for office days.

I am STARVING by 11 and keep snacking, eating my lunch by 12.15 and then snacking in the afternoon.

I know low carb and vegan doesn't really go together and I am not low carbing at all but I definitely function better with a higher protein savoury breakfast to keep my blood sugar steady.

Any suggestions? I am Looking for something I can make and pick up through the week so it's easy. Twice a week I go to the office and eat breakfast there so needs to be grab and go. Oh and I don't like the fake meat type products

I really like scrambled tofu. I have that with toast at the weekend although admittedly have toast with a huge amount of peanut butter in the week. I also have vegan sausages and mushrooms and tomatoes with toast at the weekend. I've never tried it, but I've seen recipes for chickpea scramble? Or maybe beans in toast? And perhaps a wrap for your grab and go days with hummus and falafel?

Second nice hommous on toast, especially lovely crunch granary bread. I like it with sliced tomatoes and a drizzle of olive or chilli oil at weekends.

I'm not vegan but I'd have hash browns (are they vegan?) avocado, roasted vine tomatoes and a big roasted mushroom

increase protein intake with with nuts and dried fruits, for protein, or make a homemade nut bar with mixed oats, seeds and nuts. Combine with cocao nibs, honey or maple syrup

Also Vogels bread with a healthy coating of pics peanut butter (best ever)!

Not savoury, but unsweetened porridge made with water.
Mixed grill made with tofu.
Falafel and salad wraps
Couscous with roasted veg (ready made, leftovers or antipasto)

Rye bread with guacamole, or caponata, or tapenade, or roasted aubergine spread.
Home made vegetable and bean pasties or vegetable samosas for your grab & go days.
Savoury rice when you fancy something hot at home.

Could you make some soccas? They're made from chickpea flour and the protein content is decent.

I hear they freeze well too and you just reheat in the toaster.

And you top them how you like. I'm making them next week as a base for pizza!

If you have more time at weekends, you can make Poha, I make it for lunch as I don't have time in the mornings, but it is quick.

We also like bean burritos, I make a paste by blending tomatoes, garlic, chili and pumpkin seeds, spread onto the tortilla and add beans then microwave. the paste lasts for a few days in the fridge. It's a simplified version of a recipe Rick Stein saw made on his Mexico trip.

It sounds like you’re doing a lot right. I also find I need a snack mid-morning too. Sometimes I just have a protein shake.

I second (third?) tofu scramble With other veggies in like mushrooms/tomato/sweetcorn and some nutritional yeast. It's extra yummy if you use smoked tofu. Makes a good meal on its own then.
