Hello vegans

what are you planning for the main dish for Christmas Day? Last year I stuffed a huge pumpkin and sprayed it with edible gold spray which looked amazing, any brilliant ideas?

We are two veggies, two vegans and a meat eater for the last few Christmases. I will confess that we go for ease and order whatever vegan stuff M&S/Waitrose have in.

For the 25th, I’ll probably do a nut roast of some kind - either en croute or this very festive one
In previous years, I’ve done a beetroot tarte tatin, mushroom, chestnut and thyme pithivier and wellington.

I do a nut roast en croute every year. Love it.

They all look amazing but anything not wrapped in pastry of some sort?

Last year we had the beetroot bourginon pie from M&S. it was delicious. Either having that or a nut roast this year!

Filled with all the flavours of the festive season, this Holiday Stuffed Squash recipe is a completely delicious but lighter twist on the Christmas Roast. Slow roasted butternut squash rounds filled with a lightly spiced chestnut, quinoa and lentil stuffing scattered with dried cherries.
