Vegan budget meals

Could you hit me with your easy cheap vegan meals please?

Googling said subject always throws up meals that are far from simple.

We had this spiced aubergine bake for tea with home made naan bread. It was delicious.

Veggie burgers
Smoky beans
Satay curry
Red bean tacos
Chickpea curry
Tofu fried rice
Lentil bolognese
Kitchari

“Egg” fried rice made with scrambled tofu and whatever veg needs using up is a good one
Or a rice noodle salad as you only need to boil a kettle, bean sprouts are always on a yellow sticker deal and an ok protein

Somebody posted this lentil curry/Dahl recipe recently. It is not beautiful, but it is delicious.

Cheap protein - lentils, chickpeas, beans, plus favourite vegetables (potatoes are cheap and filling), tin of tomatoes and spices will always make a basis of a cheap and tasty meal. You can make soup or stew, curry, veggies to have with cous cous or even a pasta dish (lose the potatoes for that one!)
if you have a slow cooker or a pressure cooker you can use both methods to chuck everything in and end up with something tasty, depending on how quickly you need it!

Lentil bolognese
Onion soup/Potato and leek soup/Any veg soup if you make it with veg stock.
Houmous and chopped celery sandwiches
Sage and onion stuffing mix makes a very cheap and tasty loaf that can be served as a roast dinner or sliced into sandwiches.

i made Leek orzotto from Green roasting tin yesterday. Super quick and easy
seitan steaks with chips, tomatoes, mushrooms
and salad (not quick but seitan is actually cheap and easy to make)
nut roast with new potatoes, veg and gravy (not quick but easy)
I’m about to make Cauliflower cheese, bread and salad
baked potatoes with tofu ‘egg salad’
groundnut stew and couscous

Mujadarra- rice, lentils and crispy onions. It is so moreish. I usually have it with a vegetable side dish but it is delicious on its own.

@ODFOx I am also a big fan of the stuffing mix based nut loaf. I put mashed swede in the last one I did and it was bloody lovely

Re beans on toast, adding nutritional yeast to the beans really makes a difference imo. It's lovely 😀
