What can I batch cook tonight?

Puppy arriving tomorrow, thought I’d do some batch cooking tonight as I have a fridge full of veggies and worried I won’t have much time to cook this week! Also got various beans and lentils and I think some veggie sausages in the freezer but want to make use of the fresh stuff - tell me your thoughts:

aubergine
beetroot
potatoes
a giant marrow
Brussel sprouts
red peppers
broccoli
green beans
turnips

I know you’ve no leaks but you could use onion for flavour and stick green beans in instead of leeks, top with mash instead of pasty?

With the lentils, aubergines & potatoes make a moussaka - for the topping I use 500g of yoghurt, 2 whole eggs, seasoning & parmesan.

The turnips can be boiled, mashed, add a packet of stuffing mix (or breadcrumbs and herbs), chopped nuts, fried onion and mushroom, and you have nut roast. Portion into foil containers and can be cooked from frozen

I’d roast up the marrow, aubergine and red pepper with some harissa and chickpeas to serve with cous cous or rice

Bubble and squeak with the spuds and sprouts, miso roasted broccoli and green beans with tofu or cashews, and put the beetroot in the bin where it belongs

My Mum used to make a delicious aubergine & red bean casserole. - can’t remember the book it was in but you could google it.

@Westfacing do you stuff the peppers and then freeze them? That would be genius….thanks for moussaka idea, this is the vegan board but I love a moussaka so will dig out my recipe

Apologies, I didn't realise it was the Vegan board.

Yes, I stuff and bake the peppers, then freeze. Then from thawed I re-heat in the microwave - with a slice of cheese on top, maybe a vegan slice would melt well.
