Slowly transitioning to a more plant based diet. I make lots of bean or chickpea based meals but for the first time I have bought Tofu and am looking for recommendations for how to cook it. Can anyone recommend their favourite recipes?

I’ve heard about freezing tofu to change the texture so I’ve put some slices in the freezer. Does anyone know how long it can be stored in the freezer?
Does anywhere actually sell frozen tofu? I’ve googled but only coated stuff to deep fry came up. I seem to throw a third of a block away each time as I’m the only person to eat it in our house and don’t want to eat it everyday.

Finally got round to trying it. I did the sticky soy and sesame tofu. I really enjoyed it! Definitely going to get some more tofu and try some different recipes. Thank you for the recipe fivemoreminutes and everybody else for their suggestions. I am looking forward to trying them.

Freezing tofu definitely works really well - both for storage (I don't know how long exactly but definitely fine for a couple of months) and for a better texture / better absorption of marinades etc.
Also if you haven't discovered it the tinned Marigold braised tofu is fabulous to add to stir fries just as it is - it's a bit pricey but a brilliant cupboard standby.

I like using silken tofu to make a creamy pasta sauce (add garlic, mushroom and nutritional yeast plus any other seasonings you fancy for flavour).

Finally got around to defrosting my frozen tofu. It was nice.

I’ve ordered silken tofu on my home shopping delivery so I can try this. I shall report back once I’ve tried it.

Press it, and then when squeezed the water out it makes a great tofu scramble.

Tofu "egg" scramble is delicious, lots of great recipes out there.

Just make sure you drain your tofu as well as you can to make sure you get as much of the water out as you can 🙂

Like PPs, I recommend scrambled tofu. I keep it simple - mash it with a bit of soya milk, season with salt and spices of choice, and cook in a pan over a medium heat. Serve on wholemeal toast with vine tomatoes. Literally my favourite breakfast, served with a cuppa! 😋

Waitrose have a great new Tofu product www.waitrose.com/ecom/products/tofu-tasty-craft-tofu-knots/617636-782996-782997. I bought it last week and made a curry with it. Very different to regular tofu and I'll be buying it again. Over 40% protein too. You have to soak it for a couple of hours and then you can either put it in oven or put it in your curry sauce (or whatever) and there's another way to do it but I can't remember what that was. It's all on the packet.
