Cookbook recommendations

I’m wanting to buy my sister a more unusual vegan cookbook for her birthday.
She is a seriously accomplished and technically able cook who has worked as a chef.
I was looking for an interesting cookbook with some more complex recipes she can try and challenge herself a bit with.

She has all the ottenleghi ones etc, looking for something a bit different.

This one is not technically a vegan cookbook because some of the recipes have butter, crumpled chorizo, cream, .... However I have found this unique in so many ways.
I am all about the VEG part of VEGan, and this one

explores such a variety of vegetable cooked and deliciously prepared in such unusual ways it is one of my favourite. Okra chips, who has heard of those! Or spring greens in shiitake dashi. So so different.

Some recipe such as the celeriac in a salt crust will require good cooking skills to make the salt crust without the egg whites.
It is by far the most adventurous book on vegetables.

She might however get "offended" by a non-vegan book. I take it as a challenge to twist the non-vegan into vegan.

For more strictly vegan, I would explore middle eastern cookbook but can't really recommend one specific.

Or you could go for some thing very specific and definitely not for your every day cook, vegan cheese making

It's not strictly vegan but most recipes are vegan - A Lebanese Feast by Mona Hamadeh is lovely.
