Cold work lunches - vegan friendly

Hoping some of you can share some cold vegan lunch ideas that I can take to work please Smile

Some things I've been taking recently:

Cajun quinoa (microwave pouch done beforehand) with some seasoned Quorn pieces
Quorn ham & mayo sandwiches
Falafel wraps

I have an 11mo so something quick and easy would be ideal 😂

Does it need to be cold or could you take a flask? I know you've specified cold but just wondered if hot options are a possibility before I reply!

Unlikely to fit in my tiny locker! I tend to just stick to cold 😂

Noodles! I do them with a peanut butter/ lime juice / soy sauce dressing and throw in various veg. Delicious

FLT sandwich/roll (facon!)
If you have any leftover rice you could make sushi rolls with avocado, cucumber, vegan mayo

Cold pizza. Sometimes I put black olive tapenade, cherry tomatoes and the violife feta style feese onto a pizza base then top with rocket when cooled. It’s amazing.

Massive bulgar wheat or cous cous salad/tabbouleh portioned out

Ploughmans? So fake ham, nice piece of bread, chutney, tomatoes, gherkins, pickled beetroot etc

Homemade sausage rolls or pasties - packet of pre rolled pastry and whatever’s lying around

Pasta salad
noodle salad
Roasted vegetable and hummus wrap
Gazpacho (I love the Lidl one)

Gigantes plaki (BBC recipe using tinned tomatoes) and green veg with olive oil + lemon juice

I like to take a mini picnic - little sausage rolls; olives; grapes; radishes; celery. Sometimes I make little vegetable rolls using ready rolled pastry plus chopped onion, pepper.sweetcorn etc.

Roast Mediterranean veg with couscous - it's nice hot or cold. You can use frozen veg mix to save time but it's quite quick to cut up the veg and cook in the oven with a bit of oil. Mix the cooked veg with cooked couscous or bulgar wheat and some herbs (I use basil and parsley if I've got any).

Husband takes falafel, onion bahji or samosas, hummus, olives and salad. Then shoves it all in a flatbread.

I'm not a vegan but this salad is really nice Turmeric Roasted Cauliflower Salad

If you are in a hurry, a wrap with houmus and grated carrot is nice and easy

Cous cous with roasted veg mixed through - I'm not vegan but I eat this all the time, hot or cold. You can do root veg or Mediterranean and add cherry tomatoes and olives too. Toasted pine nuts if you fancy it.
I have also been known to eat butternut squash risotto cold at work but that might not be for everyone... Toasted almonds sprinkled on top.

Tuno (fake tuna) is good. I just had the spicy one made into a mayo with sweetcorn, onions, cucumber and peri peri mayo in a wrap. It was really delicious.

Gosh sweetcorn bites are nice cold. You could make up a Salad bowl with them in?

Smoothies?

Buddha bowls in a lunch box? I make tofu strips and love them cold in a bowl of tasty bites the next day.

I like the vegan fake chicken slices and houmous and salad sandwich.
