I am a lapsed vegan getting back to a more plant-based diet. I wanted to ask for any meal ideas that you can mostly prep ahead a few days in advance, and then cook fresh in 10-20mins. I work very long days 4 days a week and the earliest I get home is 7.15pm; my mental health is terrible atm and I think sorting my diet out will be a big step in the right direction to getting healthy again. Obviously I can prep ahead things to just reheat in the microwave quickly or bung in the oven when I get in, but, the physical act of spending a short time cooking fresh food at the stove is very calming for me so I’d like to try and do that when possible.
Some examples that I can remember from when I was a good vegan, would be:
Veggie fajitas - chop the vegetables, make a homemade fresh salsa and a homemade guacamole a few days in advance (although guacamole
is probably nicer fresh and only takes minutes anyway). Even a homemade vegan sour cream, could even make your own tortillas (or more likely buy these!). Then on the night just get it all out of the fridge, throw the veggies in the griddle pan and assemble fajitas.
Kofte - make the kofte, a chermoulah and a creamy tahini sauce a few days ahead. Then on the day griddle the kofte, chop up some salad, cook some rice, and put it all together on the plate.
