Is anyone having something “special” for Easter Sunday?
Fancy making something nice for it but drawing a blank as to what

This year I’m doing this wellington recipes.sainsburys.co.uk/recipes/vegan-wellington with asparagus

Last year I did this asparagus tart www.avantgardevegan.com/recipes/asparagustart/ which was quick, easy and pretty scummy, but I don’t want to do the same thing twice.

Other recipes I was considering:
Spring veg and quinoa stew www.deliciousmagazine.co.uk/recipes/spring-vegetable-and-quinoa-stew-with-quick-pickled-little-gems/ - vetoed because of fussy children!

Hasselback veg tart recipes.sainsburys.co.uk/recipes/vegan-hasselback-vegetable-tart - not sure I’ll be able to get different coloured carrots and parsnips are too wintry I think

Moroccan pilaf www.tilda.com/eat-well/recipes/moroccan-vegetable-pilaf/ with carrot falafel www.theguardian.com/food/2020/oct/10/meera-sodha-vegan-recipe-baked-carrot-falafel and flatbreads, but might do this on Goof Friday instead

Rhubarb fool www.cauldronfoods.co.uk/recipes/rhubarb-ginger-tofu-fool - I haven’t tested this yet so it’s an option if I get the chance.
