Cheese “replacement”

Hi everyone,
I’ve been vegetarian for 25 years but gone vegan this year. I’ve been pleasantly surprised by how little I’ve missed cheese, but realising what I miss is the convenience of cheese - if you have bread and cheese in the house, that’s plenty for a tasty lunch. Does anyone have any tips on quick lunch things I can keep in the fridge or pantry , preferably things that don’t go off if I don’t eat it all within 3 days of opening....

I just ignore the 3 day thing. Mine hang around for at least a week because it’s only me eating them. For convenience meals I use houmous more than fake cheese.

I really like the Nush cheese spreads, especially the chive one which is like Boursin. Sainsbury’s free from greek style cheese a fairly decent feta substitute. Asda fake mature cheddar is pretty good. Lidl vegmondo Parmesan bakes really nicely on top of pasta dishes. Stay away from violife which is horrible.

Just forget cheese exists. It's easier. The replacements can be just about tolerable but really anyone who says they are 'nice' either can't remember cheese or never tasted a decent extra mature cheddar before.

Thanks both - maybe I wasn’t very clear. I’m not looking for fake cheeses (I’m in Australia so won’t have the same brands that you do anyway, and all the ones I’ve tried are AWFUL), more a quick and tasty alternative to the whole concept of cheese (moon on a stick maybe...?!)
I generally have hummus and guac in the fridge but I think they go better with crackers than bread (even if toasted). I like chickpea tuna but it’s a lot of effort and I get sick of it before I’ve used up the batch.
Would hummus work in a toastie?
I think my issue that although I plan my evening meals, lunch has generally been a more fly by the seat of my pants affair, and maybe just isn’t going to work anymore?

Absolutely agree with @PurpleDaisies about staying away from violife. Awful stuff.

My current lunch meals that are vegan are tinned tomatoes on toast, hummus and cucumber slices on toast, beans on toast, peanut butter on toast, and vegemite sandwiches.

Bonsan Vegan spreads are nice, especially the beetroot and horseradish one. I get mine from Ocado.

There's a lot to be said for pulping random foods for spreads, like beetroot, mustard and cooked aubergine; or cucumber, hummus, mint and tomatoes; or baked beans, peas and coriander.

Beetroot has such an amazing colour and texture.

Peanut butter
Tahini is nice on sandwiches with beetroot, tomatoes and olives

If you can find it, smoked tofu. You can have it in slices like cheese with bread, or you can smash it up with vegan mayo and a tiny tiny tiny bit of black salt (optional) for a similar taste and texture to egg mayo.

Freeze soup in microwaveable cups. Soup and bread on less than 3 minutes!
