Thank you for the birthday wishes for DD everyone!
Lovely smells coming out of my kitchen today, with a green roasting tin Dahl and ottolenghi's mushroom ragu being cooked up on a day off for later in the week Smile

Today has been
B: 3 dates, 2 slices sourdough toast, one with pink grapefruit marmalade) and one with peanut butter
L: leftovers from yesterday - crudités with bitchin sauce, olives, beetroot, cherry tomatoes, small handful of salted pecans
D: bottom of the fridge fried rice with a few salted peanuts and broccoli. Tiramisu for pudding.

Snacky until dinner time: spaghetti squash and kimchi, blueberries, raspberries, handful of crisps then a pile of roasted veg with lemon tahini dressing for dinnee

Chaotic day for me fold and other things wise!
Morning 2 cups of coffee with vegan creamer
Lunch leftover tomato sauce pasta,sauce made from leftover salsa that I'd cooked based on a recipe I found on here, (thanks MN!) And a can of tomatoes with onion, basil and garlic.

I went to sleep then (night shift) and woke up and had leftover thai tofu curry and some roast courgette.

Then I went to an appointment, went back to sleep, woke for work and had crackers with spinach and cannelini dip.

Bag of crisps (I've forgotten the brand but low cal!) At my desk a few hrs later.

On break now.. had a salad made with spicy leaves, chopped vegan sausages, home made spinach dressing, roast sunflower seeds and sprinkle of vegan cheese from lidl.

I don't think I'll eat anything else now. (She says).. that seems like a calorific day!

L. HM White bean houmous type dip with chestnut crackers and shallot. lettuce salad.
Sn\S Bowl of figs. pears and semi ground walnuts with HM cream made from almond milk and almond butter with vanilla ess.oil. Oh with half a pink grapefuit.

I had really bad stomach pain last night. The last time it was so bad was after Brussel sprouts too. I LOVE Brussel sprouts - please don’t let this be the start of me not being able to eat them!!!

I noticed a sudden increase in sprouts being popular in the US a couple of years ago @KobaniDaughters. They seemed to crop up in lots of restaurants. I hope you can continue to eat them!

Oh no @KobaniDaughters! I never used to like sprouts but since I learned how to cook them properly I love them. I hope you can eat them again.

It's been a knackering day today - I was delivering essentials to clients' houses (I work for a charity that supports older people) , first time I've seen some of them for nearly a year - it's been phone contact only. I felt all giddy just being out of the house and seeing people, and I like driving on my own so that bit was fun. But I didn't get back til later, and stupidly I'd decided to do katsu curry tonight which I always forget is a total pain in the arse to make for four people - so much dipping and breading of the various bits and pieces, cornflour and panko everywhere, the sauce to do as well, and then frying everything in batches and keeping it warm in the oven. And I always make such a mess of the kitchen. But it was worth it in the end. Maybe.

Tiramisu recipe please @PartTimeDomesticGoddess ! And I'm excited to hear what you think of the Ottolenghi ragu.

B: healthy muesli mix
L: hummus and falafel wrap from morrisons, eaten in car - was ok
D: aubergine, mushroom and tofu katsu curry

Breakfast: toasted foccacia with marmite (probably 50% olive oil, 20% vegan butter)Blush

Lunch: I bake my own bread and had a fresh roll with a mountain of crunchy salad and a sandwich sauce I make with vegan mayo, smoky BBQ bacon seasoning, garlic powder and cayenne pepper

Dinner: pasta arrabiata without cheese (still getting used to that)

Ate far too much oil today but feel good for sticking to the vegan rules.

@KobaniDaughters - hope it isn't the sprouts!
@AlmightyBob I often do that (menu plan something that takes aaages to cook on a weeknight when I don't really have time!) Hope it was worth it, I love katsu (and am happy to have it with roasted veg which is loads easier, wouldn't convince DH on that one though). I usually do double sauce and freeze half for next time too. I'll definitely share the tiramisu recipe but it might be the weekend before I have chance. The roasting tin Dahl was my lunch today and that was lovely. The roasted shallots were especially delicious

@Crackerofdoom completely agree with @Kintsugi16 about yeast flakes/nooch. Especially for pasta (and soup). Also available from supermarkets.
@FredAstairesChair spinach dressing? Please share...

B: date/coffee/pb/banana/soya milk smoothie

D: 2 Richmond sausages, sprouts, broccoli, carrots, peas and roast butternut squash with gravy

@AlmightyBob yeah I used to hate sprouts and cauliflower then went vegan and discovered roasting these veggies makes them delicious and now I LOVE them

I have a few more left so going to try to be gut healthy the next few days then eat them again and test the theory out....I will be totally gutted if it’s a problem

Spinach dressing

Exact measurements are all to taste! Depends how runny or thick you want it, how much you want to make, and how spicy or flavourful or mild.

Fresh spinach leaves

Any mild white bean (butter, cannalini, chickpeas-but if you use chickpeas you must peel them)

Garlic clove

Sunflower seeds( optional, and other seeds may work)

Salt and pepper (and any other seasoning you like, basil works well).

Chilli powder if you like an extra kick

Water

In a blender, blend garlic with a splash of water. Add all other ingredients apart from seasoning, adding water and beans in sparing amounts until correct consistency is achieved. Blend.

Taste and season

Voila Smile

That spinach dressing sounds nice Fred .
Ref. brussels sprouts, I think that they have been desulphurised! I've always loved them ,even when they tasted stronger, but they definitely taste milder now. I buy them on their stalk and keep them like flowers in water outside esp when we have visitors at Xmas. They keep much longer and taste so much better.

B. half a grapefruit, figs, walnuts and a pear
L. HM mac n' 'cheese' with a large green salad (the first time dh has eaten it) he loved it ,I didn't tell him what the sauce was made of! I used a crunched up crackers, yeast flakes and olive oil topping, it crisped up nicely.
S. 3 ryvitas pnut butter and shallot salad.

Yeah maybe I left them too long but they tasted fine - will try the stalk stick when that’s possible again (can only buy them like that round here in the run up to Christmas)

wow @KobaniDaughters - that was a feast for dinner yesterday! I want to eat all of it. I love parathas. Clever topping for the mac and cheese @ppeatfruit - sounds great, glad your DH loved it.

D: persian legume soup again. I'd cooked the chickpeas, beans and yellow split peas this morning, left them sitting in their bean water all day, then added them and the water to the frying onions and garlic before adding the spinach, herbs, spring onions, extra stock, and simmering for a bit. Helped cut the cooking time down, or at least spread it out over the day.

L: grated violife epic with celery and Mayo sourdough sandwich. Apple
D: Roasted butternut squash with couscous containing almonds parsley and coriander with a date molasses dressing, topped with a Moroccan spiced bake

Yeah it was lush! All bought at a farmers market stall last weekend and thrown in the freezer then reheated, made a decent sized plateful with only leftovers for me to have a bowl of curry (no rice, samosa or paratha) tonight so it didn’t feel too much

I can’t be bothered to look back for the infamous soup recipe, can someone post it again? I’ll give it a whirl in the instapot as I have all the dried beans

@AlmightyBob we had the mushroom ragu tonight and it was amazing! DH was sceptical (as is often the case you might have noticed 😂) but loved it. DD14 tried a bit and was impressed and there's loads for the freezer 😋

Bought the ingredients for the peppered tofu by the ottolenghi recipe kindly shared going to try it this weekend. Love to hear the recipes that people like.

D the happy pear Leek and potato pie
Sn bliss balls trying to crack choc addiction these have cacao nibs in them which I don't really like but hopefully wean me off the choc. Xx
