Vegan cheesecake

I have an amazing cheesecake recipe but it requires cocoa butter and I thought I had some and I don’t and I’m supposed to be making it first Christmas so now it won’t happen

Anyone got a good cheesecake recipe that they’ve tried and liked that I can use? Want to do chocolate and Christmas spices but I can adjust if you have even a plain vanilla recipe!

Check out Sophie bullimore 😊 she has an IG all about vegan baking and very tasty but everyday ingredient recipes - she has pb cheesecake, biscoff and Oreo I think. If you Google 'Sophie Bullimore cheesecake' you should find them x

I always make cheesecake, just your regular digestive base (or you could use any biscuits gingernuts lotus) with melted vegan spread. Then use one tub of elmlea plant double and one tub of violife cream cheese. Whisk the elmlea first then whisk in the violife and any flavours or melted chocolate. Alternatively I do a chocolate torte which is chocolate biscuit base blitzed up (oreos or bourbon creams) then a ganache topping of just chocolate and cream. This is lovely if you add mint or orange. You don't need elmlea double plant for this you can use oatly or alpro, just heat up the cream and add 200g of chocolate leave to set and dust with cocoa powder.

I use a tub of cream cheese, a carton of soya cream, a block of tofu and a dollop of maple syrup for the topping - whizz them in a blender and add flavourings (eg bar of melted chocolate or handful of raspberries). Simple and never fails.

Cream cheese isn’t very vegan though Smile

I make a frozen one (or usually little cupcake size ones), from a recipe from the minimalist baker, it uses cashews as the filling and it’s really delicious

@BiscuitDrama I meant vegan cream cheese eg Toffuti. I thought that would be obvious enough on a vegan thread to not need spelling out.

And, should have added - People who are cooking for vegans rather than being vegan themselves will find it useful to learn that there is a vegan cream cheese.

You can use silken tofu in place of cream cheese and vegan "cream" whipped with a little vegan gelatine to set. I don't use a recipe I admit.

There's a great one in my cheesecake cookbook that is vegan, if I locate it today (just moved still unpacking) I'll pm you
