Anyone think these would work in potato cakes or veggie burgers or something?? Hate throwing food away! They're already cooked and have flora on.

We do 'mashed potato mash-up' here where we basically chop up leftover veggies and herbs, bit of garlic, seasoning, and chuck it into a base of mashed potato then fry or grill.

The DC love it.

Thank you that's exactly the sort of thing I was thinking of! Feels like it needs mushroom gravy as well Grin

It's called bubble and squeak.
Very tasty even just with sauce.

I made bubble & squeak with potato, onions and leftover rocket once, it was delicious, IME any greens will be good. Salad leaves don't even need to be cooked first.

Also, chop any leftover veg and fry up with cooked rice. Good with brown sauce.

Update, they were pretty good. I can see day old mash working better.

But I also made vegan sticky toffee apple cake and it is the absolute nuts.
