Vegan starter

It's our anniversary tomorrow and we are having mint, pea and lemon linguine.
And if one of us have time a raw vegan lemon or blueberry cheesecake.

Any tried and tested ideas for a starter that would go?

I could go down the bruschetta route but I am gluten free and my husband isn't keen on tomatoes. I have done a garlicky aubergine bruschetta before but I'm not inspired. I don't fancy bread followed by pasta.

I've been looking at something with broccoli and have done a simple stir fry with ginger, garlic and broccoli with cashews before but not sure that goes.

Something light in this heat would be good.

What about garlic mushrooms.

WitsEnding · 13/08/2020 10:47

Watermelon with other fruit and mint leaves?

WitsEnding · 13/08/2020 10:48

Sorry, you’ve got mint in the main ... honeydew melon ginger and berries then

SerenityNowwwww · 13/08/2020 10:48

Oh oh oh I know - avocado! I love a boring old avocado and tomato salad (lots of herbs) - is there any vegan cheese that could work as a feta? Nice and cool too in this heat.

Antipasti plate?

SerenityNowwwww · 13/08/2020 10:50

Or - always popular here - a selection of things like semi dried tomatoes, hummus, crudités, olives, (ok so we also have Tadziki and cheese but there are vegan alternatives).

Congrats in the anniversary btw.

Imtoooldforallthis · 13/08/2020 10:57

What about bang bang cauliflower

Breathmiller · 13/08/2020 11:33

Oooh...thanks everyone. So many nice ideas.

I'm liking the bang bang cauliflower or antipasta idea.

But melon also sounds lovely and fresh.

Congrats in the anniversary btw
Thanks. We are doing up the bathroom together so I'm surprised we have made it to Friday to be honest without divorce. Grin

It's our 18th wedding anniversary.

I might check what the appropriate gift is.. maybe it will be tiles? (Although we don't do gifts- in fact it's in thr middle of birthday season for the kids so we don't tend to do anything but we thought it was time to do something just for us).

Just looked and its porcelain, so your tiles tiling is the perfect job.

Haha. Is it, thats fab.
Well, we did buy a new toilet!! The romance is overwhelming.
Maybe we'll actually have it plumbed in and usable by tomorrow. Grin
