Cauliflower?

Dues anyone have a good vegan cauliflower recipe? But not a vegan cauliflower cheese! Maybe somehow combining it with miso? Or a chilli rub?

I’ve got an enormous cauliflower looking reproachfully at me from the fridge & can’t think what to do with it.

You could easily adapt the recipe from Karavan for the spiced aubergine dish. It's delicious.

Cut some thick slices down through the whole crown so they are held together by the central core, like steaks of cauliflower, and fry till golden, serve with a tomato sauce. (Look on yoooo tube for instructions)

Coat with a spicy sauce and oven roast, or make a conventional cauliflower curry.

Turn it into cauliflower “rice”, or make a pizza base with it.

Tandoori Cauliflower steaks is a good one. Instead of yoghurt marinate it in a batter made from just enough besan to let all the spices stick. Then grill / barbeque / griddle it.

Gunpowder gobi (instead of gunpowder potatoes) is also a really good recipe.

You could also mince it, cook it with spices, and make gobi paratha. It’s actually really easy to do

Roast florets with garlic, onion, peppers and kale or savoy cabbage, seasoned plus with lemon, paprika or zaatar, olive oil.
Serve with chick peas, tahini, parsley and pomegranate seeds

I'm obsessed with the cauliflower popcorn from plant kitchen at m&s. Im sure you could make something similar with a simple batter and maybe slices of cauliflower so it's easier to fry?
