Dinner for friends

Hello vegans

I cook a lot for friends though obvs haven’t recently, we all got tested and isolated so we can start being practical help to our friends with their baby. They’re coming for dinner tomorrow so want to fill them with something tasty and nutritious but also really bored of cooking and need some inspo.

Caveats:
No peppers of any kind (including chilli) as there’s an allergy
Using some of what I already have in (will also go shopping): fingerling potatoes, vegan sour cream, yellow courgettes

I’m going to do a lemon cake tart thing Nigella posted on Instagram yesterday so something summery would be good, will head down to the farmers market to get some veggies today

Courgette fritters. Potato salad with the sour cream, add chives, salt and black pepper.

Big green salad, roasted vine cherry tomatoes, crusty bread with dairy-free spread.

Maybe add some roasted asparagus or garlicky flat mushrooms?

Stuffed large tomatoes (rice, wild rice courgette, onion, garlic, stock cube, fresh herbs if you have)

Tagine with courgette, aubergine, chickpeas, onions, chopped tomatoes, cayenne pepper (or black pepper) coriander stalk and leaf, cumin, apricots (just leave out the chilli and peppers from a normal recipe basically). Serve with cous cous, flatbread and the sour cream plus green salad

I was considering tagine but actually loving both your ideas of tomatoes in some form, might do the stuffed toms but with the potato salad AND garlicky mushrooms!
