Any ideas for beetroot, chilli, ginger, cabbage?

Not vegan, just veggie, but my son is, so am pretty much by default as too busy to cook separate meals.
Not necessarily all 4 ingredients at once - they can be 4 separate meals!
Bought a random veg box and don't normally buy these much so not sure what to do with them.
I also have some tofu that needs eating, I'm guessing the ginger/chilli could be used with this?
I've got far too many cookbooks and can't face trawling through them all today.
Any suggestions?

Ginger, chilli and cabbage are great in stir fry type dishes.

If red or white cabbage, that is great in coleslaw, as is beetroot

Beetroot and ginger are nice in soups with other root veg/carrots etc

Shred cabbage and beetroot and then make a slaw with a ginger chilli - and lime if you have it- dressing?

Roast the beetroot and serve with a ginger dressing with the tofu on top?

You could stir fry the cabbage with the tofu and use the ginger and chilli in it.
Is it fresh beetroot - if so could you make some sort of vegan cake using it?
If pickled I always put it in a salad.
Sorry not experienced with vegan cooking!

Hugh Fearnley-Whittingstall does a delicious beetroot and walnut hummus. The other ingredients would make a lovely stir fry.

Sadly it's pickled or I'd definitely try a cake - love random veg cake as the kids usually don't like the idea so there's more for me Grin
Coleslaw sounds good as I do a mean homemade veggie burger.
Just feeling in a bit of a rut meal wise at the moment.

Borsch with the beetroot & some potatoes & onions, with vegetable stock.
Stuffed cabbage leaves with a rice/mushroom/ peppers mixture, then bake. Serve with a tomato sauce.

Shred cabbage, beetroot, ginger, chop chilli, stir fry with tofu and add soy sauce, and the zest and juice of an orange, plus a tsp sugar, cook until liquid reduces in half. Honey works too.

Oh just seen that you’ve said now it’s pickled beetroot, so beetroot salad or Russian salad is the way to go!

Thanks all, chucked everything except the beetroot in a stir fry, thought it was excellent but the offspring ofc said it wasn't as good as normal. First time I've managed to make Tofu edible though so I'll take it as a win. Smile
Coleslaw was equally excellent.
Cooked borscht today and wasn't expecting much, but was pleasantly surprised!
