Has anyone made a vegan meringue? I'm doing a full vegan Christmas dinner on Sunday and I'm thinking of a Christmassy pavlova. I'd be grateful for any hints or tips from anyone who's tried them as there isn't time for a trial run. Do you still get the slight chewy centre?

A great vegan website - itdoesnttastelikechicken.com has a fantastic recipe for vegan meringues. Less time in the oven = chewy. More time = crunchy all the way through.

Are you using aquafaba? I tend to whisk, then chill for a few minutes before adding sugar. Seems to help the structure somehow.

I use this recipe and they come out really well but I'm not sure if the recipe would work for a large pavlova? We tend to make Eton mess with ours.
