Whenever someone has a birthday in work, we all have a birthday cake which they cut and share. One of my staff has been vegetarian for a long time but has now gone vegan. I haven't been able to source a vegan birthday cake so last night bought vegan products and tried to make cupcakes. They were a complete disaster. Didn't colour, didn't rise and were inedible. I bake often and can do cupcakes with ease, so don't think I did anything wrong, baking wise. does anyone have a cake recipe which doesn't need obscure products which I won't have in and I can try again. I still have almond milk and a vegan "butter" which I can use.
