I have £2.20 in my pocket. I also have a cold and want something comforting. Any ideas MN legends??

Tinned soup and toast?

Thisnamechanger · 19/11/2019 17:39

Just to add I have, from memory, spahetti, half a stale-ish loaf, capers, caperberries, two potatoes, some frozen sweetcorn and a full spice rack inc. stock, and some basics like spread and coconut milk...if that helps!

Do we think tinned peas are gross?

Do you have any olives and chopped tomatoes? You could make a basic puttanesca source?

(And I love tinned peas!)

If you got some red lentils and veg you could make a delicious dhal. You could use the spices and coconut milk you already have. It's very tasty and would do for a few meals.

I think I’d bake the potatoes and top with sweetcorn and a nice cheddar. You’ll have to buy cheese. If the cheese is cheap get some tomato soup to have with it.

I know this is an old thread but I’ve only just found the Vegan board. I have a very filling and tasty soup recipe my mum gave me when I was a student and it’s soooooo cheap:
1 carrot
1 stick celery
1 onion
1 clove garlic
1 pint of stock
100g red lentils
Chop all the Veg and fry in a little oil, add, stock and lentils, simmer for half an hour or so, season and blend.

It’s quite a thick soup and very satisfying.
Apologies for mixing my metric and my imperial but the key to remembering the recipe is the “1s”

Thanks Thinkle, I have been meaning to give lentil soup a go for a while.
