It's sausage and lentil casserole. Could I use quinoa or couscous instead

Pearl barley or pearled spelt would work just as well - I think quinoa and couscous would probably break down and go a bit mushy.

But perhaps cook the barley/spelt first as it takes a lot longer than 15 minutes - more like 40-50 mins!

Please let me know if you try one of these substitutions and it works! I've wanted to cook this recipe for ages but can't find farro wheat. The irony of the recipe explaining where to buy vegetarian sausages did not pass me by...

I would use couscous but only add it 5 min before end of cooking.
you might need to add some extra (hot) liquid as couscous soaks up a lot.
