sandwich fillings

My lovely niece, who is vegan, comes for a meal about once a month after visiting my MIL/ her grandma. I've got quite used to cooking vegan main meals for her and in fact some have become family favourites that we have when she's not here.
This week she's just calling in quickly round lunchtime and said just a sandwich would be fine.
Just wondered if you had some recommendations for lovely sandwich fillings? Have never bought vegan cheese. Is it considered any good? Brands you prefer?

Sandwiches

Felafel with avocado and basil

Sliced onion bhajees with mango chutney and soy/coconut yoghurt raita

Houmus with grated carrot, apple and jalapeño

Hummous, grated carrot and raisin is surprisingly delicious, on a seedy bread.

Hummous, roasted red pepper, sliced black olives and rocket on granary is my favourite

This is my favourite topic! I love a good sandwich!

Fried falafel so it gets that crunch to it in a wrap with shredding iceberg lettuce, diced cucumber and onion, hummus and tzatziki is something I could eat every day.

If you want to keep it simple, falafel is great or you can pick a premade sandwich up in most large supermarkets.

Other simple ones that aren't much work:
Onion Bhaji with mango chutney.
Avocado, Basil and tomato chutney.
Veggie sausage and ketchup.
Stuffing, cranberry sauce and gravy in a baguette (a guilty Christmas pleasure atm)
Quorn vegan chicken or ham with lettuce, gives a lovely crunch and most supermarkets sell deli meat.

A little more work but totally worth it:
Coronation chickpea or chicken pieces.
Above falafel suggestion
BLT with vegan Bacon (the Quorn ham pieces are great or Morrisons sells fake bacon)
chopped veggie burger in a wrap with salad and sweet chilli sauce.
Baked chicken nuggets with free from pesto and salad in a wrap.

I love a sandwich!

Hummus, avocado, salad, beetroot, falafel, vegan sausage.. soup is another quick tasty option

Asda stock vegan quorn slices for sandwiches. If you have a Holland and Barrett near you they sell loads of sandwich slices too. X

Two votes for coronation chickpeas here! We are a fully vegan household and these are our absolute favourite sandwiches. Even baby seems to like themas she somersaults whenever I make them! Lots of good recipes online.

Avocado mashed up with lemon juice, garlic paste and a dash of ketchup with rocket, red pepper and onion relish

Pizza base tomato sauce, green olive tapenade, grilled or fried aubergine and black olives

Don't use any of that pretend cheese or meat unless you know she likes it.
