What would you like on a buffet?

My lovely bil is staying with us over Xmas and he's vegan. He comes over a fair bit so I'm used to a bit of vegan cooking which is no bother and something I've got quite into.
On Xmas eve I'm doing a buffet and just wondered if I'm missing any tricks, is there anything really lovely I can add? He's so good with our kids and I want him to have nice food at Xmas.
This is what I've go so far (this is for everyone not just him) feel free to say if you think anything sounds rubbish!
Nice bread
Dips
Hummus
Tomato, basil and mushroom tarts
Potato salad with fennel and olives and beetroot
Avocado salad with mustard dressing
Tabuleh
Caponata

For pudding I'm doing brownies and mincemeat strudel with nondairy ice cream.

What do you think is it enough? Maybe something with rice?
There will also be some curly fries if the kids don't eat them all first!

I'm not vegan but I'd be chuffed to bits with that! Maybe some plain corn tortilla chips or similar if he wants a crunchier dipping experience? You sound like an excellent host though. Wine

I am not vegan, but I like (love, even) boring steamed vegetables.

You can make lovely veggie sausage rolls. Cut linda McCartney sausages in half lengthways and also across the middle. Take a roll of puff pastry. Spread some tomato ketchup and some branston pickle on the pastry. Wrap up the sausages and heat in the oven.

Tescos do vegan mini 'sausage' rolls that you bake at home as well as samosas if you want to pad it out a bit.

Thanks for the ideas think I will get some sausage rolls and samosas I think that's what I need something a bit more stodgy!

Paprika Pringles are vegan

Also a rice salad with spring onions chick peas cucumber tomatoes black beans celery etc always goes down well.

That all sounds good to me, except the fennel which is one of the few things I don’t like! Make sure you make loads of it all not just enough for him, because everyone always wants the veggie/vegan stuff as well as the meat.

Tesco’s frozen mini veg sausage rolls are delicious.

Tell what I love on a buffet and that is Linda McCartney sausage rolls. Fully vegan and to die for, a bit unhealthy but it’s Christmas Smile

This! I’ve been left with nothing to eat.

What you’re making sounds fantastic. My current favourite thing to eat is baked cauliflower wings from the Bosh cookbook.

Oh yes I agree about making loads. People always seem to head straight for vegan food whilst declaring they could never actually be vegan. Grin

Thanks everyone I think I will go for ready done sausage rolls then saves a job and if they're good...
@buffalocauliflour I'm making them using jusroll puff pastry will pan fry finely chopped mushrooms, tomatoes and red onion with garlic and olive oil then top and bake .I will make a kind of pesto to put on the top with basil, pine nuts and olive oil.
Yes yes to making loads I noticed last year when I made a vegan breakfast buffet thing on Xmas morning last year I made a warm cranberry compote with home made granola and yogurt poor bil only just got there in time before everyone got stuck in I also did the ready made croissants, pain au chocolate and cinnamon whirls was really surprised they were suitable for vegans.

I must admit I'm not cooking this Xmas day ( that's not a meal I enjoy preparing!) but I do like making nice picky food. And I know bil gets a bum deal a lot of the time especially at family do's plus everyone else seems to enjoy the food!
