Nut roast recommendations

I don't often make a nut roast, except at Christmas. What are your Christmas recipes for a nut roast? Most of the meat eaters in my family test out a bit of nut roast at Christmas so I need it to taste absolutely awesome (I get disapproved of for my deviant lifestyle choice Grin)

I made one last year that was quite cumin-y, which I normally love in a curry, but wasn't overkeen in a nut roast Hmm

I make the best chestnut roast (it's just a vegetarian stuffing, no dairy of course) which everyone eats with their meats! I have to 'hide' it to get 2nds!

I gently fry 2 onions and 3 garlic cloves in olive oil and a with little veg stock, then add chopped semi steamed celery/carrots (or whatever roots you like) put all in a large heavy saucepan. with more stock and simmer till soft. I use 2 vacuum packets of chestnuts (unsweetened). Add some breadcrumbs. At the end of cooking. I then puree one of the packs of chestnuts with half of the veg. Chop the others up. Mix together Then put in 2 oiled loaf tins (ot pretty container suitable for oven to table) , and roast for half an hour or so. Or freeze and cook the night before Xmas (just heat on the day) Serve with onion gravy.

I'm Sad because we're eating out this Christmas day, I'm going to miss my chestnut roast! I might make it anyway!!

Oh sorry I forgot, obviously add whatever herbs you like ( i love dried tarragon, bay leaves and sage) I add tamari for colour and saltiness, because I don't salt while cooking.

I roast at about 170C or less\more depending on the oven. the fan etc. Grin

Oh I also forgot that I sometimes add some wine to the stock. It's good for the flavour.
