We have a member of staff leaving next week and as is the custom in the office we all bring in baking to be shared over the course of the week. This member of staff is vegan and baking without eggs/butter is fairly our of my comfort zone even though i'm a fairly competent cook.
Would be very grateful for any great recipes - things like brownies or traybake would be ideal as they could stay in the tin all week. Large cakes which need slicing not ideal. No nut or other allergies.
