High calorie vegan diet?

I just wondered if anyone has any tips as I have a lovely vegan friend coming to stay for a while and I already have a restricted diet so keen to make sure I keep our energy up (I can’t eat grains, and get sick of potatoes!)
I often eat nuts as they are but does anyone have any good recipes including them?
I made a filling dahl involving coconut milk on her last visit so will try that again. And I already add olive oil to things.

If anyone has any other tips I’ll be delighted as normally I rely on butter/ ice cream /cheese more than I should as seem to run out of energy and find it hard to keep weight on.

Have you tried making a nut roast? Also use things like avocado, hummus, maybe try making some raw vegan cake (something like thequeenofdelicious.com/en/raw-vegan-lemon-cheesecake/ ). Stir fries with lots of peanut butter, Thai curry with coconut milk and cashew nuts. You could try having the vegan fat shake at this link www.nomeatathlete.com/gain-weight-vegan/. You can also get vegan butter, ice cream and cheese!

Falafel is very filling, I love making sweet potato falafel if you look it up you'll find recipes. Having it stuffed in a pitta with hummus, and any veggies/ salad you like. My fave is with red cabbage slaw. Just red cabbage, red onion and grated carrot with a splash of white wine vinegar and loads of chopped coriander. You can use a vegan mayo if you like. This makes a super filling lunch and is easy if falafel and slaw are prepared earlier. Could also serve with extra slaw on the side and sweet potato wedges for dinner maybe corn on the cob too especially if you've bought some butter.

Stir fries with lots of veg, tofu/quinoa and rice thrown in and a quick sauce of peanut butter, coconut milk and chilli flakes. You can add peanuts or cashews too.

Found you the recipe for these, they're an absolute fave treat of mine and dh. Can also we done with banana

Wow, both these replies make me feel hungry- what delicious ideas and very inspiring . Thank you so much and I think I will try them all ! And we do love falafels so sweet potato ones sound very exciting
