I recently bought a yoghurt maker, the kind with the warming plate and glass jars. I successfully made cow's milk yoghurt with milk and a yoghurt starter. However, DH is slowly going dairy free, and I tried to make soy based yoghurt. it didn't work and stayed runny with starter yoghurt sinking to the bottom.
I used oatly barista milk. Heated it to 86C, cooled it to 40C. Used Alpro soy yoghurt which has live cultures as the starter. Added the warm milk to the soy yoghurt, 2 teaspoons to each jar, mixed them together. Set the yoghurt maker for 7 hours. Came out as above, runny with yoghurt having separated from the milk.
What went wrong?
