Batch cooking inspiration

I'm expecting DC3 in october and trying to be slightly organised (not going well so far....) I was thinking of having a couple of weeks' worth of dinners in the freezer to see us through the adjustment period and I'm struggling a bit for inspiration. So far I've thought of lentil bolognese, bean chili, lasagne, minestrone without the pasta in. Anyone with any ideas please?

Tomato sauce for pasta
Various casseroles - pork, beef, sausage etc
Bolognese sauce - for pasta, converting to chilli or shepherds pie or lasagne!

DH made this curry for us tonight and it was lovely. Said he tweaked a bit with extra spice and peanut butter as was a bit bland initially

Does Dahl freeze OK?

Also does anyone know if tofu freezes well? I make tofu nuggets that like, and also a lovely quiche with a tofu base but never tried to freeze it.

If you have a slow cooker you could prepare a load of dump bags full of ingredients for meals such as on the link above and just chuck them in the s.c. as and when you want them.

Could I have your tofu nugget recipe please wejammin?

My freezer recipes are

  • mushroom pearl barley risotto
  • lentil shepherds pie with garlic and coconut mash topping
  • sausage casserole (using tesco mini frozen vegan sausages)
  • apple dahl (Dreena Burton recipe)
  • hidden veg tomato sauce

Thanks @clownstar, will add those to my list!

For the nuggets I use firm tofu, I will press it for a couple of hours if I have time, then cut into rectangles, approx 2cm x 2cm (very approx!). Then I dredge in seasoned cornflour and then flax egg or just oat milk, then either flour again or crushed up cornflakes or breadcrumbs. Chill for a bit then fry or bake until golden depending on how healthy I feel.

Dahl freezes really well - had a great version recently made with green lentils, fresh ginger, and rhubarb!

Minor derail but - I used that recipe wejammin and DD ate the lot, no complaints. I'd done hers deliberately bland with just a bit of seasoning.

I had plenty left so I did the rest for me and DP adding chilli flakes to the cornflour, did the same to some slices of sweet potato, then did a katsu curry sauce. This is probably the best thing I have ever done to tofu. And I bet the katsu curry sauce would freeze well - it was just the first five steps from this recipe; www.lazycatkitchen.com/vegan-katsu-curry/
