What to feed extra vegetarians

Planning an Easter Sunday roast (well a Nigella lamb with beans thing) and may possibly have two vegetarians joining us. What can I make them that will go with the lamb but isn't really boring?

Can you do a portion of the beans without lamb? Same ingredients so hopefully not giving you extra work? I'd be happy with that, and it means you know it will work with all your sides etc.

Nigella's Moroccan inspired golden root vegetable casserole with cous cous and harissa. Goes well v well with lamb. Also a complete dish on its own. Quite a bit of chopping involved but an easy dish for guests once prepped as it doesn't require precision cooking and is more than the sum of its parts ifyswim plus cous cous v easy indeed!

They are vegetarians, not vegans

I was thinking about doing cous cous anyway as I usually do goosefat roast potatoes with the lamb but obviously not for vegetarians!

No it's in How to Eat p227 of pb version: golden root vegetable couscous.

It's a long recipe but just happened to have typed it out for someone else so can pm you with it if you like.

There is a 'roast beef' in the frozen vegetarian foods section at Sainsbury's if that is any help

I prefer roasties done in butter rather than goose fat and this is acceptable to vegetarians, well my veggie DH is happy with them. Grin
I also make a sort of gravy with veggie granules but add red wine and redcurrant jelly to make it tastier.

Did the golden root vegetable stew with cous cous along with the lamb and beans and a big bowl of green beans and it went down a STORM!!
Harissa paste is a revelation, my MIL loved it
