Vegan food diary thread

I have been vegan nearly a year and I have loved it, but it's definitely possible to eat vegan but not healthy foods so I am going to do a little food diary here to log February as a health 'reset' to my diet.

So today:
B - Overnight oats with chia seeds, banana and raspberries
L - Leftover veg fried rice with tofu and half a small avocado
D - Portobello mushroom burgers with salad, sweet potato chips (and onion rings - it is friday after all!)
Snacks - satsuma and a couple of rice cakes with the other avocado half and some hummus.

I make that about 8 of my 5 a day Smile

matcha green tea latte for breakfast
triple mushroom vegan ramen for lunch
vegan green tea mochi for lunch pud
banana and almond butter for snack
squash, coconut and ginger soup for tea

L: Cous cous salad with roasted squash and beetroot
S: Mango and pomegranate seeds
S: 4 vegan cookies 🙈
D: Morrocan aubergine tagine with flat bread and hummus
S: small glass of white Rioja

Today
B - vegan buckwheat pancakes
L - vegan grilled cheese sandwich
Snack - homemade popcorn
D - sweet potato & black bean mole & rice
Alpro choc/hazelnut dessert and glass of red wine.

Yesterday - can’t remember breakfast! Lunch was tesco on-the-go - falafel & hummus wrap, crisps, apple and a graze protein bite. Dinner was pasta with a creamy sundried tomato sauce (made with cashews and other stuff all chucked in the blender).

Today - breakfast avocado on toast. Lunch leftover pasta from last night, and dinner another portion of the sweet potato & black bean mole from Sunday.

B - Sausages, Beans, Bubble and Squeak with half a french baguette
L - Home made Bruschetta
T - (Homemade Bruschetta - to 'start' and Chicken Nuggets and Chips.

Not nutritious really, but just what the doctor ordered.

Leftovers for lunch
Cashew and edamame stir fry for tea.
Tomorrow not sure, but Weds tea will be mushroom Wellington
Thurs beetroot orzotto
