Vegan macaroni and cheese

Looking to make a vegan mac and cheese for first time. Can anybody advise please whether to use a vegan cheese and if so, which one (does Violife bloc cheese melt?) Or do people prefer a cheese alternative (cashews etc)? Making it for 1 vegan, 2 veggies, and one omnivore. Talk about complicated!

I make it with silken tofu, soya/oat/ almond milk, lots of nutritional yeast, vegan Worcestershire sauce, black pepper all whizzed up together and then mixed with the macaroni. Sometimes I add chopped up cauliflower as it add veg and makes it a bit less dry. And a couple of tablespoons of the water you've cooked the macaroni in make it stick together better.

Normal roux as you would usually make mac and cheese - using vegan butter, flour, soya milk, and some mustard, garlic, then loads of nutritional yeast and tesco vegan mozzarella.
I’ve also been successful blending white beans like cannellini for the base, can add a bit of miso paste for depth of flavour.

Guac and cheese was unexpectedly successful at a recent get together, all the omnivores kept helping themselves to more - I can’t remember exactly how I made it but it was along the lines of beaten avocado until creamy, obviously there was nutritional yeast, added some caramelised onions and probably some soy sauce ??? wish I could remember! When it tasted just right cooked the pasta, drained then added to the ‘sauce’ and mixed it all up.

Thanks all for this. In the end, I used the Jamie Oliver vegan mac and cheese recipe online, just so I got the quantities right, but all of the above look great too. And now I've made it once I feel a bit more conident about experimenting. Couldn't get the mozzarella from Tesco, but just used violife bloc cheese and melted well. Also picked up loads from the Tesco Wicked range for vegans -result. Thanks all!
