I'm not vegan but eat about 50%vegan.
What do mean by dinner? If you mean something you would serve to guests I'd suggest Asian cooking (veggie Indian made with oil and not butter).
If ideas for yourself well today for lunch I had puy lentils (braised with onion, garlic and parsley), potato salad (dressed with olive oil, lemon and chilli) with steamed asparagus.
Other day we made bean rissoles (type thing - made with left over mash), served with aubergine in tomato sauce.
More European is grilled courgette and aubergine antipasti with roasted peppers.
I'd like to eat more vegan so will be watching this thread, particularly for any bean/pulse recipes.
