Weekly meal plan (I'm going vegan!)

Hello, I'm about to go vegan, I'm new to this and I'm hoping you guys can help me out with some of your favourite/staple meals so I can make a meal plan for the next week or so...

Aubergine stuffed with red rice and smoked tofu with hummus is my favourite ever dinner!

Porridge made with oats, ground flaxseed, hazelnut milk, almond butter and frozen fruit is a typical breakfast

I found Deliciously Ella's recipes ( mostly vegan) very easy when I started.

Very easy
Any type of pasta - boil according to instructions
Meanwhile fry garlic, onion and mushrooms in some olive oil
Mash an avocado.
Add to pasta with vegan pesto and torn up basil and chopped tomatoes

Make sure you take a B12 supplement and use calcium fortified products
Lasagne made with cashew cream
Chilli
Tofu scramble
Falafels with couscous and roasted veg

In case it helps you, here is my meal plan for the week:

Breakfasts:
Mon/Tue/Wed/Thur/Fri: porridge with peanut butter, or bran or muesli, made with oatly barista milk
Sat/Sun: cooked breakfast with potato farl, fried onion, mushroom, cherry tomato, baked beans, and maybe Linda McCartney sausages

Lunch:
Mon: salad topped with pumpkin seeds
Tue: cauliflower soup and bread
Wed: salad topped with avocado
Thurs: broccoli soup and bread
Fri: salad topped with walnuts
Sat: lentil soup and bread
Sun: salad topped with hummus

Dinners:
Mon: spaghetti bolognese (lentil and veg bolognese, quick and easy)
Tue: Deliciously Ella's carbonara (amazing, cashew nuts make the sauce creamy)
Wed: Black bean chilli and rice (great for batch cooking and freezing!)
Thurs: Pasta arrabiata
Fri: Falafel burgers and chips and beans
Sat: Three bean wraps with guacamole
Sun: Chickpea Dal and flatbreads

Healthy snacks: apples, oranges, nuts, veggies dipped in hummus

Unhealthy snacks: crisps, chocolate, homemade biscuits, wine...

Wed: smoothie, buddha bowl, Chips, curry sauce
Thu: smoothie, noodle soup, peanut noodles and broccoli
Fri: pancakes with aquafaba not eggs and almond milk, smoothie, scrambled tofu on toasts
Sat: smoothie, noodle soup, pizza
Sun: smoothie, buddha bowl, spaghetti, broccoli
Mon: pancakes, smoothie, black bean chilli
Tue: smoothie, hummus veg wrap, black bean chilli

Having a 'eat the freezer and fridge' week so we can clean it out before holiday so we're having lots of cupboard food!

Monday -
Tesco Vegan Caramel Pannacotta Blush
Cheese Sandwich
Giant Yorkshire with Sausages, Mash, Brocolli and Gravy

Tuesday -
Protein Toast (Leftover from rest of Musclefood Loaf)
Cheese Salad
Nandos with my DS and friend

Wednesday -
Granola
Taifun smoked Tofu salad
Roast dinner with Quorn fillets, roast potatoes, mixed veg, gravy etc.

Thursday -
Granola
Leftover Roast
Veggie Burgers and Wedges

Friday -
Granola
Veggie Burger and Veg
Bulled Chicken and rice (made using Shredded quorn fillets)

Saturday -
Fry Up with Sausages, Hashbrowns, Toast, Fried Onions and Mushrooms, Bacon and Beans
Smoothies
Veggie Chili and Rice from three months ago the freezer

Sunday
Pancakes/Waffles with Frozen Berries and natural yoghurt
Lunch out at the Trafford Centre when holiday shopping
Cheese Baguettes with Salad

Snacks
Homemade hummus and crudites
Leftover fruit including bananas, apples, kiwis and satsumas
Dregs of the crisp bin
Meridian nut bar
Cereals

DH is also having Cream of Mushroom soup for his night shifts and 'instant noodle broth' with Ready noodles, miso paste, soy sauce, Linda McCartney duck pieces, bits of Oriental veg with have left and just adds hot water.

Where do you find spaghetti squash, Kiki? I've never tried it, never seen it in the supermarket. I heard Waitrose have it sometimes but never when I've gone to look. Am planning on growing it myself next year to try!

Ah well I love in California so in the autumn I find it in abundance in every supermarket and farmers market! It's tres seasonal though so maybe just hunt around once the nights start drawing in?

Quorn do some vegan products now, mostly frozen. They do some gluten free products too, but I've not found any vegan gluten free ones Angry!

That's a fab idea! I've stir fried the LM 'duck' bits from frozen before.... do you just let them defrost and then add hot water?

Had porridge this morning, falafel and houmous pitta for lunch and its home made Chick pea curry tonight. Tomorrow is sweet potatoes and home made black bean burgers with green beans, Saturday is tomatoes and basil pasta, Sunday is tofu nuggets and sweet potatoes chips
