Vegan alternative PLEASE!?

Before I went vegan I used to make these breakfast Egg Muffin things - basically mix veg and eggs, pour into muffin tray and bake. They were my go-to breakfast always. Been vegan 2 years now and always had cereal and smoothies for breakfast, all good. I'm pregnant at the moment and my God I've been craving those breakfast Muffins so much - plus they were a great way to get veg in the morning. Can anyone suggest an alternative for binding as good as eggs? I don't want to use the egg alternatives as they're so expensive, a friend mentioned soft Tofu, which I've never actually played around with? Any help is greatly appreciated!

Ground flax seed works brilliantly if you don't mind the texture/ colour. The initial outlay isn't cheap but a packet tends to last me a month or so. Works about the same as the eggs I used to buy. Also from a nutritional point of view you're getting all the omega 3 you would've got from the eggs.

I lived on omelettes/frittate for the longest time. I didn't get on too well with tofu scrambles as a substitute but chickpea flour is 😻😻😻

Excellent - I've got 2 big vegan supermarkets nearby (luckily), so should have no problem finding it!

unavita - I'm lucky as I live in Manchester so we have 8th Day and Unicorn! I don't know what I'd do without them!

I live near a massive Indian supermarket and they too have chickpea flour and flaxseed! May be a lot cheaper too, so check them out.

There's also Oggran, a commercial egg replacer....

Hi chia seeds would work well in this recipe, just make sure you soak them first so they turn to a gel consistency

I make scrambled silken tofu, sprinkle a bit of nutritional yeast in and it does taste quite a lot like eggs!
