Hi. I have fussy kids and term time they have packed lunch. But now it's the holidays I'm kind of stuck for ideas they are so fussy.
Can you tell me what you will be doing your kids for lunches thank you.

Puff pastry tarts with hummus and vegetables

Lots of different pasta salads

Peanut butter & banana sandwiches

Pizzas topped with vegan pepperoni, nutritional yeast and basil
Vegan fish finger sarnies
Tofu scramble
Spaghetti and tomato sauce
Tomato soup
Beans on toast
Vegan cheese toasties
Pancakes made with aquafaba and almond milk/coconut milk. Top with chocolate spread/peanut butter/blueberries/bananas/soya yoghurt etc
Potato wedges and curry sauce
Noodles and broccoli with a peanut sauce
Veggie burgers and chips

This noodle salad is lovely and can be served warm or cold and you can adapt the veggies to whatever you have in the fridge and of course, swap the noodles to vegan noodles.

Which pepperoni is the best?

Nydj those things sound nice. I will do the noodles first. Not sure if the kids will go for it but I will.

I make a pepperoni out of quinoa, beetroot, tofu, kidney beans and paprika. Blitz in a food processor and spread out on a lined baking tray and cook on a medium low heat until slightly browned. Wait till they cool a little then get a bottle top and cut pepperoni shapes. Freeze on a plate then once frozen put in a bag. Sounds like a weird combo and a bit of a faf but they last for ages and my son thought it was really pepperoni.

Search manami frost on YouTube, she had excellent vegan ideas! And has done a video about what her kid eats in a day and takes as a pack lunch

Chickpea flour pancakes - four parts chickpea flour, one part rice flour, salt, chilli powder, lime juice, teaspoon of sugar, chopped coriander leaves ( or any fresh herbs you fancy or even spinach) - mix everything into a paste with water and keep adding water until you have a runny batter - as runny as milk for thin pancakes. Make the pancakes by heating some oil in pan, pouring batter in pan and swirling it around to thinly coat the pan - once. Poked on the underneath, flip and cook on the second side. I like to have them with sweet chilli sauce and yogurt. They take a while to cook so not recommended when feeding a lot of people but they do taste really nice.

OP try Vbites vegan pepperoni (holland and barrett, probably ocado, independents).

"Plant based foods" do a good salami. Wheaty brand is also good but hard to get hold of.

You can defrost linda mccartney sausages and shape them into meatballs

Linda mccartney also do lovely sausage rolls and vegan scampi
